Escape to Banff

As much as I like cooking I do like to go out sometimes and enjoy a relaxing day in the mountains and one of my favourite places is Banff.

Banff is a resort town within Banff National Park in Alberta, Canada. It is located in the beautiful Alberta Rockies along the Trans-Canada Highway, approximately 126 km (78 mi) west of Calgary and 58 km (36 mi) east of Lake Louise. At an elevation of 1,463 m (4,800 ft), Banff is the community with the second highest elevation in Canada after Lake Louise.

Banff reminds me very much of Switzerland. Banff is a beautiful tourist town. No wonder, Banff is one of  Canada’s most popular destinations, known for its mountainous surroundings and hot springs, and absolutely breathtaking scenery. It is a destination for outdoor sports and features extensive hiking, biking, scrambling and skiing areas within the area.  At the end of it all, you can relax and unwind at one of Banff’s premier spas or Hot Springs.

If culture is calling your name, you’ll enjoy the variety of museums, galleries and historic sites located in Banff National Park. From world-class art exhibits to new works presented at one of Canada’s leading arts institutions, heritage home tours, National Historic Sites and more, Banff has a rich collection of opportunities to immerse yourself fully into its history and heritage – both past and present. Food aficionados will fall in love with the region’s unique array of restaurants and eateries, while shoppers will find the perfect gift or souvenir to take home from the variety of boutiques and shops located in both Banff and Lake Louise.

There’s no shortage of things to do in Banff and Banff National Park! All you need to do is get here.

After all that hiking and walking around we finished the day with dinner at Earls. The restaurant casual atmosphere, beautiful surroundings and fast service makes the dining experience  relaxing and pleasurable. The food, as always, was delicious. I ordered the Hunan Kung Pao dish and my husband had the Chicken and Brie Sandwich.

I just love this spicy dish. Loaded with seared vegetables like carrots, red onions, peppers and a few hot, hunan peppers ( I add 3, usually ) and added chicken, makes for a large and filling dish.

Chicken, Brie + Fig Sandwich – $13.75

Grilled chicken, melted brie, roasted apples, spinach, sweet fig jam, garlic mayonnaise, house baked ciabatta.

Another of my favourites is this sandwich.  The chicken with melted brie, fig jam and apples pair wonderfully in this ciabatta sandwich. It comes with your choice of a side dish choosing from fries, soup or salad. For a lighter side dish the green mixed salad with roasted pecans, topped with crumbled cheese and vinaigrette is a great choice.

To finish the meal I recommend my favourite dessert; Chocolate Sticky Tofee Pudding. A warm, rich chocolate cake, chocolate and toffee sauce and vanilla ice cream...perfect for sharing :-).

Hope you enjoyed my little escape to Banff.
