Chocolate chip cookies

 
Love making cookies! They are the easiest thing to bake and the kids can be also involved in making them.

This recipe comes from my daughter.  She loves to bake cookies and she has so many favourite cookie recipes...I love chocolate, and now this recipe has become one of my favourites too. Loaded with chocolate chips, you've got to be a chocolate lover to enjoy the wonderful deliciousness....The pecans complement the chocolate giving them a wonderful nutty flavour. Perfect combination! You can reduce the amount of chocolate chips but really, why would you ? These cookies are fun and easy to make and when they bake, the delicious aroma that fills the kitchen will make anyone standing around eager to taste them....

Ingredients:
1/2 cup butter, unsalted*
1/2 cup shortening
1 cup light brown sugar (I used golden cane sugar)
1/2 cup sugar
2 eggs
1 tsp. vanilla extract
2-1/4 to 2-1/2 cup flour
1-1/2 tsp. baking powder
1 tsp. salt
1 cup chocolate chips, semi-sweet
1/2 cup chopped pecans

Directions:
In a large mixing bowl, beat together butter, shortening and sugars until light and fluffy.

Beat in eggs and vanilla extract.

In a medium bowl combine the flour, baking powder and salt;  add first 2 and 1/4 cup of flour to the creamed butter mixture. If dough is still to sticky add the rest of the flour and mix well until all flour is incorporated.

Stir in the chocolate chips and pecans.

My big helper; my little grandson loves to help…

Drop by tablespoonful's 1 inch apart onto a lightly greased baking sheets. (Since my grandson was helping, we rolled the dough before placing  on the cookie sheet and the cookies came out more rounded).

Bake at 350 F for 10-12 minutes or until edges start to lightly brown. Remove to wire racks to cool.

* if you are using salted butter, omit the teaspoon of salt.
