Apple Strudels


Do you love apple strudel but don't have the time (and patience) to make the dough? There is an easier way to enjoy delicious strudel rolls using Phyllo pasty. Found in the freezer section of your supermarket, Phyllo pastry are thin sheets of dough rolled up and ready to use. Just defrost the box in the refrigerator overnight, then use according to the indications in the recipe  bellow. What you will end up with it's a flaky and delicious apple filled pastry.

Ingredients:

1-1lb. (454 gr.) pkg. Phyllo pastry

4 lb. ( 1800 gr.) apples

1/2 cup sugar ( I used golden cane sugar)

1 tsp. cinnamon (or more, to taste)
1/2 crème of wheat*

1/2 cup unsalted butter, melted

Icing sugar, for dusting (optional)

Directions:

Peel and, using a large grater, grate the apples into a large bowl. Sprinkle the sugar over the apples, stir to mix and set aside for 30 minutes.

Press apples through a strainer and press with a spoon (or your hands) to squeeze liquid out; discard liquid (or drink it, if you like). Return apples to the bowl; sprinkle with cinnamon.

Unroll the stack of Phyllo pastry sheets. Take 1 sheet f pastry (cover the rest with a wet towel to keep them from drying) and place sheet on a piece of parchment paper; brush with melted butter. Place a second sheet on top of the first one, than brush with melted butter. (The thin sheets do break easily but don't worry, they are very forgiving...it looks good in the end :-)

Cut sheets in two in the center, vertically and place the two halves on top of each other, to get a stack of 4 smaller sheets.

Sprinkle about 1 spoonful of crème of wheat on one side closer to the edge, place a few spoonful of grated apple filling, about 2 inch wide strip; sprinkle some more crème of wheat on the apples, (like in the picture above).

Starting from the edge closer to you, roll the dough up over the filling (as a jelly roll) and place roll on a greased cookie sheet. Repeat the process with the remaining pastry and apples. Brush top of the rolls with melted butter.

Bake at 350 F for 30-35 minutes or until golden brown. Remove from oven and let cool slightly then using a serrated knife, cut into portions. Dust with icing sugar if desired.

Makes: 7 rolls
*Crème of wheat can be found in the cereal section of your supermarket. As a replacement, fine bread crumbs can be used.

TIP: For a crunchier filling, chopped walnuts can be added to the grated apples.
