Sour Cherry Cake Squares


If you are looking for an easy tangy, coffee cake like recipe, this is it.  The recipe uses sour cherries and coconut flakes for topping.  It is easy to make. You can whip up in no time at all. I always like to keep an extra jar of sour cherries in my cold room just for this recipe. Fast and easy and the end result is a soft, and yummy fruity cake.

Ingredients:
1 cup margarine
3/4 cup sugar
5 eggs
1 cup flour
2 tsp. baking powder
1/2 cup milk
1-450 gr. jar of Sour cherries, drained
1/2 cup unsweetened medium coconut flakes

Directions:
Using an electric mixer, beat together margarine with 1/2 cup of sugar, reserving the rest of the sugar for the egg whites.

Add egg yolks one at a time beating after each addition.

In a bowl stir together flour and baking powder. Add to the margarine mixture in small additions alternating with the milk. 

Beat egg whites with the remaining 1/4 cup of sugar, then  into the batter. Spread batter into a greased and floured 9-inch by 13-inch baking pan. Drop the sour cherries on top of the batter. Press fruit lightly down into the batter with a spatula.

Sprinkle top with  the unsweetened coconut flakes.

Bake at 350 F for 25 minutes or until lightly brown and toothpick inserted comes out clean.

Remove from oven and let it cool before cutting into squares.
