Date Fig Cookies

 
You are going to love this easy and fast cookie recipe; just mix, stir, drop and bake, and the end result are cookies that are soft and moist and just plainly delicious. The combination of dates, figs, pecans and cinnamon make this cookies very flavourful and did I mention, delicious?!  and while they are baking, the aroma that fills the kitchen, makes you eager to taste one. One word of warning though. You might not be able to stop at just one! :- )

Ingredients:

3/4 cup butter, unsalted, softened

3/4 cup sugar

2 eggs

1 tsp. cinnamon

1-1/2 tsp. baking powder

1/4 tsp. salt

1 tbsp. lemon juice

2 cups all-purpose flour

1 cup finely chopped dates (about 12 pieces)

1 cup finely chopped figs (about 250 gr.)

1 cup finely chopped pecans

Direction:

Grease 3 large cookie sheets; set aside.

In a large bowl with an electric mixer, cream together butter and sugar until fluffy and creamy.

Add the eggs one at a time beating until all incorporated.

Beat in the cinnamon, baking powder, salt and lemon juice.

Mix in the flour until all incorporated. Remove mixing bowl and using a spatula, stir in the dates, figs and pecans.

Drop tablespoons of the cookie dough about 1 inch apart onto the prepared cookie sheets (they don't really spread out ).

Bake in preheated oven to 350 F for about 10 to 12  minutes or until lightly browned.

Cool on cookie sheet until cookies are firm (about 5 minutes) then transfer to racks; let cool completely.

Makes: 3 dozens

TIP: Store cookies in a cookie jar for up to one week.
