Crackle Cookies

 
Here is another cookie recipe for those of you chocolate lovers out there... These cookies resemble to the wonderful taste of a chocolate cake.

Ingredients:
2 oz. (60 gr.) bittersweet chocolate, melted and cooled
1/4 cup unsalted butter, softened
1 cup Sugar
2 eggs
1 tsp. vanilla extract
1 cup all-purpose flour
2 tbsp. cocoa powder
1 tsp. baking powder
1/4 tsp. salt
1 cup Confectioners' sugar

Directions:
Chop bitter-sweet chocolate into small bits, and melt over a pan of simmering water. Set aside to cool.

In the large mixing bowl, beat butter and sugar until light and fluffy. Add eggs and vanilla, and beat until well combined. Add melted chocolate.

Sift together flour, cocoa, baking powder and salt. Add flour mixture (on low speed) and mix until just combined. Cover bowl with a plastic wrap and chill dough in the refrigerator until firm, for at least 2 hours.

With sugared hands, shape dough into 1-in. balls. Roll in confectioners' sugar until all the dough is covered completely. Place 2 inches apart on greased baking sheet.

Bake at 350° for 10-12 minutes or until set. Transfer from oven to a wire rack to let cool completely.

Store in an airtight container for up to 1 week
