Sautéed Red Cabbage

With Canadian Thanksgiving being a few days away, I thought I would share one of my special recipes with you. I like to make this sautéed red cabbage dish when making a roasted turkey.  It is easy to make and the tart and sweet taste, pairs great with roasted turkey or beef.

Red cabbage
 
Ingredients:
1 medium size, red cabbage, thinly sliced
2 tbsp. oil
6 tbsp. sugar
1/4 cup vinegar
1/2 tsp. salt
1 tbsp. caraway seeds
1 red apple, sliced



Directions:
Pour oil in a large pot; add sugar. Melt sugar on low heat, stirring occasionally until sugar is melting, and caramelizing, and becomes light brown in color.

Pour the vinegar all at once over the melting sugar, and cover pot quickly with the lid, (it will splatter as vinegar hits the hot pot).

Add cabbage, salt, caraway seeds and sliced apple. Toss with a fork to mix. Cover and let cook on medium heat, stirring occasionally until cabbage is cooked. This may take about 45 minutes. (Add some water if necessary to prevent cabbage sticking to the bottom ).

Keep covered until ready to serve. Place cabbage in a casserole dish and serve.

TIP: It came be made the night before and warmed up next day, before serving.
