Amish Oatmeal

Did you know, breakfast is the most important meal of the day? Well, I'm sure you do. We all do. That is why we like to start the day right, with a good breakfast.

This is a simple and easy recipe for baked oatmeal. This is my daughter's recipe. She made it for us  one morning while she was staying with us...Thanks Honey, for a great recipe!!

I have to say, I'm not really an oatmeal person. My husband likes to make oatmeal, as a porridge, with nuts and Dried fruits oatmeal...He always says, "eat, it's good for you", so I will eat it. On the other hand, this Amish oatmeal is something I really enjoy!!

Serve it topped with fresh berries (or frozen ones) or other fruits you like. Try adding a few spoons of chopped pecans, walnuts or almonds. For a sweeter taste, drizzle top with maple syrup, or Agave syrup. If you find it dry, (or even if not) use some milk over top. My hubby likes it with almond milk.

My choice of fruit for the day; papaya, cantaloupe and strawberries. Yummy!

Ingredients:
1-1/2 cups quick-cooking oats
1/4 cup sugar
1 tsp. baking powder
1/2 tsp. salt
1 egg
1 cup milk
1/4 cup butter, melted
1 tsp. vanilla extract
Milk ( or almond milk) and fresh fruits, for serving, optional
Maple syrup, optional
 
Directions:
Place oatmeal in a medium size bowl. Stir in sugar baking powder and salt. Add egg, milk, melted butter, and vanilla extract and mix well.

Spread evenly into a greased 9” x 9” square  baking pan.

Bake at 350° for 30-35 minutes or until edges are golden brown. Serve hot; spoon into bowls; add milk if you like and top with your favourite  fruit; drizzle maple syrup on top, if desired.
