Two Cabbage Salad


This is a yummy refreshing salad. It is cool and creamy and just perfect for  a summer day picnic. Easy to put together and can be made the day before.

Raw cabbage is  great source of Dietary Fibre , minerals and  vitamins, and I find this salad to be another perfect way to include raw food in our diet. If you interested to check out the nutritional information click on CABBAGE.

Ingredients:
3-1/2 cups finely shredded green cabbage
(about half of a small head)
1-1/2 cups finely shredded red cabbage
(about a third of a small head) 
1 tsp. salt
1 carrot, shredded
2-3 green onions, chopped
 
Dressing:
1/4 cup sour cream
1/4 cup mayonnaise
1 tbsp. vegetable oil
2 tbsp. apple cider vinegar
1 tsp. sugar
1 tsp. celery seed
1/4 tsp. white pepper
Worcestershire sauce, a few shakes
 
Directions:
Place shredded green cabbage and shredded red cabbage into a large bowl. Sprinkle with salt; stir to mix. Add chopped green onions and the shredded carrots. Toss with a fork.

In a small bowl stir together sour cream, mayonnaise, oil, vinegar, sugar, celery seeds, and white pepper. Add a few shakes of Worcestershire sauce. Whisk together to blend.
Pour over the cabbage in the bowl and toss with a fork. Serve.

TIP: Great made the day before. Keep refrigerated until ready to use.
