Spaetzle


Spaetzle is a traditional German dumpling or noodle, made from wheat flour and eggs, then boiled in water. It can be added to soups or other dishes.  It is served ussualy as a side dish much like potatoes or rice, along saucy meat dishes.

It is widly used also in the Hungarian kitchen. I serve spaetzle or nokedli, as we call it, with Chicken Paprika or for my vegetarian friends I make my special  Mushroom Paprika.

Spatzel


Ingredients:
2 eggs
4 tbsp. vegetable oil
1 tsp. salt + 1/2 tsp.
1 1/2 cup water
3 1/2— 4 cups all-purpose flour
 
Directions:
In a medium size bowl, whisk together eggs, oil, salt and water. Mix in enough flour to form a thick, batter like dough. Set aside.  

Meanwhile, in a  larger pot, bring about 3 quarts of water to a boil; reduce heat and let simmer. Add 1/2 tsp. of  salt.

Spaetzle_maker

Place batter into the spaetzle maker, like the one in the picture above and place it over the pot  of simmering water; press batter through the spaetzle maker into the watera and stir with a wooden spoo to prevent sticking.

Cook noodles, uncovered, for 8-10 minutes, stirring occasionally.


Drain well and place into a lightly greased casserole dish.

Serve in soups or as side dish.
