Cauliflower and Broccoli Gratin


Another satisfying vegetarian dish that is easy and quick to make and is yummy :-)

  Broccoli-Cauliflower Casserole

Ingredients:
5 cups cauliflower
3 cups broccoli florets
2 tbsp. oil
4 green onion, sliced
3 cloves garlic, minced
2 medium tomatoes, chopped
1/2 tsp. oregano
1/2 tsp. salt
 
Sauce:
2 eggs
3 tbsp. oil
1/2 tsp. salt
1/4 tsp. pepper
3/4 cup half-half cream
2 tbsp. sour cream
2 tbsp. grated Parmesan
1 cup grated Swiss cheese
1/2 cup bread crumbs
 
Directions:
Place cauliflower and broccoli in a pot (or a steamer); add water, and cook until vegetables are tender, (for about 10 minutes). Drain and set aside.

Place oil into a skillet; add green onions, a splash of water and garlic; sauté for 1-2 minutes ( to release flavour) then add chopped tomatoes and salt. Cook for 10 minutes. Remove from heat and mix with the cooked  broccoli and cauliflowers; tossg gently to mix.

Sauce; To make the sauce, whisk together in a small bowl, eggs, oil, salt and pepper until blended. Add half-half cream, sour cream and mix togethe. Stir in Parmesan, 3/4 cups of grated cheese, and 1/4 cup of bread crumbs.

Grease lightly a 9x13 inch pan. Sprinkle bottom of pan with remaining bread crumbs. Spoon the vegetables into the pan. Cover with the the egg and cheese sauce and sprinkle the remaining grated cheese.

Bake at 350 F. for 45-50 minutes or until top starts to brown.

Serves: 6-8 people
