Potatoe Pizza

Do you know, that having a good breakfast it is important, right? We have all heard it before: breakfast is the most important meal of the day!  In my family, we always tried  to start the day right with a good  and nutritious breakfast. It was something important for my husband and he made sure, whenever he had the time, that there was a warm, cooked breakfast on the table  for the family to enjoy together before we all went on with our day.

So, here is one of my husband's special recipe;


                    
6-7  medium sized potatoes
eggs
1/2  cup grated smoked cheese
3  cloves  garlic, crushed
1  tbsp simulated bacon bits
1/2 tsp salt
1/2 tsp seasoning salt
1/4 tsp freshly ground pepper

3-4 tbsp oil for frying

Peel, and wash potatoes. Pat them dry.  In a large mixing bowl,  using a large grater, grate all the potatoes. Add the egg, grated cheese, garlic, bacon bits, salt and pepper.  Mix together well.

Preheat a 12” frying pan; add oil. Spread the potato mix  in the pan and pat it lightly  to even out.  Cook on medium low heat for about 15 minutes, then turn over  on the other side continue to cook for another 15 minutes until browned .
Let it stand for a 5  minutes before serving.

Cut into wedges and serve with dill pickles.

Tip: If you like a more intense smoke flavour, add a few drops of liquid smoke.
